Chipotle Ranch Grilled Chicken Wraps
Prep/cook time 25 minutes + time to marinate chicken Ingredients
1.5lb chicken, antibiotic free
12oz chipotle marinade (try Lawry’s Chipotle Molasses, no high fructose corn syrup)
8oz shredded Mozzarella cheese, part skim
½ cup Ranch dressing (try Marie’s Dressing or homemade)
8 large whole wheat wraps
Marinate chicken according to bottle directions, reserve ½ cup marinade.
In a large pan, over medium heat, cook and shred chicken until cooked through. Discard runoff marinade. Remove shredded chicken from pan and place in bowl or Tupperware container. Top with reserve marinade and toss to coat. Note: This could be done in advance and refrigerated, or right before preparing wraps.
Lay out wraps, divide chicken, cheese and ranch (1 tablespoon each) onto each wrap. Roll wraps.
Heat a grill pan to medium-high heat. Spray with non-stick spray. Grill wraps on both sides until heated through.
