The Recipes for Health Nutrition Challenge is a way for Norton employees to combine healthy food choices with the joy and art of cooking at home. The challenge required employees to build their own pasta salad using creative, healthy ingredients, snap a photo then submit to N Good Health. Winners are chosen by a panel of three judges and the prize pack includes a $50 Kroger gift card, pizza cutter, reusable cup and straw, and an N Good Health-branded apron. Our first nutrition challenge winner, Emily Abner, is an HR Coordinator for HR EEX People Ops and Support and has been with Norton Healthcare for 5 years. She is originally from an area north of Cincinnati, Ohio and has lived in Louisville for several years. For fun, she spends time with her partner Nick and his 5 year old daughter, Norah. She also enjoys travelling, hiking, biking, and at home Emily especially loves to cook, garden, and watch scary movies. Emily used the following recipe to create her perfectly plated pasta salad:
1 box tri-colored pasta
1 cucumber – peeled and cut
½ bell pepper – color of your choice
1 small can of sliced black olives
½ can of artichokes – drained
1 medium carrot – peeled and cut
1 ½ cups grape tomatoes – sliced in half
2 tbsp. fresh dill
6-8 oz. of Italian dressing of your choice
Salt and pepper to taste
