Instant Pot Pesto Quinoa and Veggies

Instant Pot Pesto Quinoa and Veggies

Makes 6 servings

Prep time: 5 min Cook time: 15 minutes


1 red bell pepper, diced

½ red onion, diced

1 ½ cups uncooked quinoa

½ teaspoon salt

½ teaspoon black pepper

4 cups spinach

2 cups low-sodium chicken broth, or any other broth

2 red tomatoes, diced

1/3 cup pesto

Feta cheese and sliced almonds to garnish


Combine bell pepper, onion, quinoa, salt, pepper, spinach and broth in instant pot. Cook on rice setting or for 8 minutes on manual.  

Use manual release when done.  

Add tomatoes and pesto. Mix well.  

Serve warm or cold garnished with feta cheese and sliced almonds.
